Tom yum originated from Thailand. Characterized as a broth by its hot and sour flavors with fragrant spices and herbs and cooked shrimps. Tom yum tastes at it best when fresh ingredients used.
Ingredients:-
Stock (chicken/vegetable) 4 cups
Lemon grass: -3 stalks
Kaffir lime leaves: -4 pieces
Thai chilies: - 2nos
Chilli paste: - 3tbsp
Fish sauce: - 8 tablespoons
Limes: - 3nos
Cilantro leaves: - 6 springs
Onions: -1/4 cup
Mushrooms: - 1 cup
Salt to taste
White pepper to taste.
HOW TO MAKE IT: -
In a large sauce pot bring the stock to a boil
Add the lemon grass, kaffir, Thai chilies, onions, mushrooms and let the flavors infuse in the stock.
Add the seasonings like fish sauce, chili paste let it simmer
Add a meat of your choice which is optional, I have added shrimps.
Remove the lemon grass and kaffir leaves.
Season with salt and pepper and serve hot.
